Hello, again! So I must say that by living in Florida, you get to take comfort in the fact that it’s always summer. That said, I am still fresh from Chicago, so consider this post an ode to my friends back home, prepping their winter attire for the frigid weather that is the windy city. If I had to name a vegetable that instantly made me think of summer, the answer would be: corn. So it goes without saying that my corn fritters with a charred tomato salsa does just the trick for those who want to revive a taste of summer in their lives. Let’s get cooking!
For the fritters:
1 ½ cups all-purpose flour
¾ cup corn meal
2 tsp sugar
1 tsp kosher salt
½ tsp black pepper
1 cup whole milk
½ cup sour cream
2 large eggs
3 cups fresh corn kernels (preferably charred on the grill)
½ cup of freshly chopped scallions or chives
In a large bowl, mix all of your dry ingredients together. Next, add your wet ingredients and give it a light mix. Last, add the fire roasted corn, cut from the cob-along with the chives or scallions-and mix into the batter. Now, give your batter one last quick mix and set aside.
While you give your batter a chance to rest, go ahead and coat a heavy-bottomed pan with about 1 cup of your favorite cooking oil. I prefer vegetable oil with a little bit of olive oil for flavor. Next, place the pan on a medium flame on your stove and let it come to temp. Once it’s ready, take a heaping tablespoon of the batter and fry in batches-being sure not to crowd the pan-until each side is a golden brown (about 2 minutes on each side). Once done, take the fritters out and place them on a sheet pan that is lined with a paper towel to absorb the excess oil. Then, immediately season with another round of salt and pepper.
After you’re done cooking the fritter whip up any type of condiment that you think will pair nicely with this. For me, it has to be my charred tomato salsa. Maybe after some time, I will feel comfortable relaying this recipe; for now, I have to keep it for myself, tee hee. Once you’ve picked the condiment of your choice, smear some over the top of the fritter and add some parmesan cheese over the top.
