Hello again! The morning is still young and when I roll out of bed, I immediately start thinking of things that will appeal to me. Of course, I always run down the cliché list of: “bacon, eggs, sausage, grease, butter, grease, salt, butter, butter, butter”. But, sometimes you just need something that will make you feel like you can take on the day as opposed to curing that lingering hangover. For me, I run to my baked oatmeal. My reasoning for liking this dish is due to the fact that you can literally throw anything in it that strikes your fancy. In this dish, I prefer toasted cinnamon, toasted pecans, bananas and cranberries. Then, right before serving, I add a healthy glug of fresh, amber-grade maple syrup and a pinch of sea salt. While I’m keeping this recipe to my chest; I hope that a discussion of this dish at least sparks some creativity within all of you foodies. In life, there are choices and for me, I choose to eat things that rekindle a bit of childhood and then give them a face-lift. I was always told to cook with what I know—this is what I know. I hope you enjoy this dish as much as I do and I hope you create something that will be equally pleasurable.
